| How Was the Syrup Season? by Alicia Morissette There have been mixed reviews about this year's sugaring season. Many sugarmakers have reported a less than average crop, but a high sugar content in sap made a lot of fancy grade, good tasting syrup.For the majority of producers, February was the best time to gather sap, because the temperatures allowed the sap to run. However, by mid-March, the flow became sluggish and began producing darker syrup. At this time, many sugarmakers decided to call it quits for fear of burning pans and because of the lower grade product. Continued on Page 2 |
